Q: do deer eat heath and heather plants ?

Generally, they do not. That said, they will eat anything if hungry enough. They will however trample the plants so I suggest "interplanting" with rocks and mulching with crushed gravel say 21AA. They will not want to walk on that stuff. Best And Happy Yardening, Nancy
